Instant Red Velvet Mugcake

There are days where you feel too tired to bake. When it is too much of work to get the mixer out and the oven preheated. However, there can never be a day without craving for something that is sweet.

I was on the Net late at night completing my way overdue assignments when I came across something that was hard to believe.

“A chocolate cake that requires basic ingredients and best of all.. bakes in a microwave oven?” how absurd, I thought. I was skeptical, googling for more of such recipes and ignoring my now wayyy overdue work. Googling for ‘instant microwave mugcake’ took precedence and I was determined to debunk this so-called myth.

“It can’t be that the whole Net is lying? Can I just get it done in my microwave oven?”

I then tried the chocolate instant mugcake version and it was stupefyingly good!

Not contented, I baked my own version the next day. Red velvet was trending during that time so I decided to make this version next. After mixing, I placed them into two mugs. Tried one in the microwave. Turned out perfect and moist!

Instant Red Velvet Mugcake

  • 1 tbs milk
  • 1/8 tbs vinegar
  • 2 tbs raw sugar
  • 2 tbs buttermilk
  • 2 drops red gel food colour
  • 1/2 tbs vegetable oil
  • 1/8 tbs baking powder
  • 1/2 tbs cocoa powder
  • 4 tbs all-purpose flour
  • whipped cream (for topping)
  1. In a medium sized bowl, mix all the dry ingredients using whisk. Add all the wet ingredients including food color and mix well to combine.
  2. Divide the batter into two small mugs and pop into microwave over and microwave for about 1 minute each.
  3. Once done, test the mug cake with toothpick for doneness. Let the mug cake cool for 10 minutes. Top with whipped cream or topping of your choice and enjoy.
  4. A tip here is that do play around with the microwave setting and timing. Different microwaves have different power.
